Mapo Tofu
I won't lie, I gaslit myself into enjoying the concept of this dish because of Angel Beats
How to do it
- Take the tofu out of package and wrap with paper towel
- Put a dish on top and soak for 20 minutes
- Dissolve the starch in the water
- Remove the tofu from the paper towel
- Slice the tofu
- Slice in half horizontally to make 2 flatter blocks
- Cut vertically into ¾ inch cubes
- Heat wok and add some sesame oil
- Stir-fry the ground pork at high heat
- Add the garlic and ginger when pork is browned
- Add the sauce
- Add on one side of the wok and mix it in
- Add sake and stir until golden
- Add chicken stock, soy sauce, and more sake
- Add the tofu gently
- Bring to a boil at high heat
- Bring heat to low and simmer 2–3 mins
- Add chives on top
- Add the starch water and swirl the wok around to mix gently
- Turn heat back up to high for 30 secs
- Serve
- Eat
