Mapo Tofu

How to do it

  1. Take the tofu out of package and wrap with paper towel
  2. Put a dish on top and soak for 20 minutes
  3. Dissolve the starch in the water
  4. Remove the tofu from the paper towel
  5. Slice the tofu — slice in half horizontally to make 2 flatter blocks; cut vertically into ¾ inch cubes
  6. Heat wok and add some sesame oil
  7. Stir-fry the ground pork at high heat
  8. Add the garlic and ginger when pork is browned
  9. Add the sauce — add on one side of the wok and mix it in
  10. Add sake and stir until golden
  11. Add chicken stock, soy sauce, and more sake
  12. Add the tofu gently
  13. Bring to a boil at high heat
  14. Bring heat to low and simmer 2–3 mins
  15. Add chives on top
  16. Add the starch water and swirl the wok around to mix gently
  17. Turn heat back up to high for 30 secs
  18. Serve
  19. Eat
