Garlic Butter Shrimp

How to do it

  1. Crank a skillet (cast iron or wok) to high heat.
  2. Add olive oil; coat the bottom.
  3. When the first wisps of smoke appear (not burning), add shrimp in an even layer.
  4. Let them sizzle untouched; sprinkle with salt.
  5. After about a minute, toss and stir-fry.
  6. They should be about halfway cooked.
  7. Add garlic and chili flakes; stir ~1 minute — don’t let the garlic brown.
  8. Add lemon juice, one chunk of butter, and half the parsley.
  9. Keep stirring.
  10. When the butter is fully melted, reduce heat to low; add the rest of the butter.
  11. When melted, taste and adjust salt.
  12. Garnish with the remaining parsley and serve immediately.
