Garlic Butter Shrimp
My fingers were bleeding after peeling all these shrimp
How to do it
- Crank a skillet (cast iron or wok) to high heat.
- Add olive oil; coat the bottom.
- When the first wisps of smoke appear (not burning), add shrimp in an even layer.
- Let them sizzle untouched; sprinkle with salt.
- After about a minute, toss and stir-fry.
- They should be about halfway cooked.
- Add garlic and chili flakes; stir ~1 minute — don’t let the garlic brown.
- Add lemon juice, one chunk of butter, and half the parsley.
- Keep stirring.
- When the butter is fully melted, reduce heat to low; add the rest of the butter.
- When melted, taste and adjust salt.
- Garnish with the remaining parsley and serve immediately.
